
Mango China Grass Pudding

Mango Pudding is a combination of both delicious and healthy dessert. Agar Agar is a great natural substitute for gelatin which is obtained from sea weed and has various health benefits.
China grass is one of the prime elements during the month of Ramadan in our household. Each day there will be different variants of pudding made out of China grass on the Iftar table.
But that doesn’t stop me from making it any time of the year because it’s tasty 😋.
It sure is a easy to make dessert especially when you are expecting guests at home or for potluck party. You can prepare it well in advance and forget about it by allowing it to chill. This reduces much of the hassle during such situation.

What are all the things you need?
Mango - 1 big
China grass - 5g
Sugar - 1/3 cup
Full fat Milk - 1 1/2 cup
Water - 1/4 cup

How to Proceed with it?
Soak the China grass in 1/4 cup of hot water for half an hour.
Peel the mango and purée the mango pulp in a blender or mixer.
Strain the mango purée to extract the fiber.
In a saucepan, add the strained mango purée and sugar.
Wait for the mix to come to a boil and let it cook for 5 mins to get rid of the raw taste of mango.
Meanwhile melt the china grass along with water in a separate sauce pan.

Melt the China grass completely in a low to medium heat.
Now to the mango purée, add the milk and the melted China grass.
Mix it well, after 5-10 minute in a medium heat, the mixture starts to thicken and let it come to a boil.
After 5 minutes of boiling, take it off from the heat and immediately transfer it to the serving bowls.
Let it cool down to room temperature and eventually it will start setting in.
Refrigerator for 5 hours & serve it chilled.

Notes :
Store bought mango pulp can be substituted with the extraction process of mango pulp process but check with the sweetness as the store bought one is mostly sweetened.
