Coconut Mousse

A mousse recipe with minimal ingredients making it easy to whip up.
This recipe is perfect for parties and any last minute preparation.
Addition of coconut, elevate the tropical flavors making it perfect for hot summer days.

What are all the things you need?
Heavy whipping cream - 250 ml
Jaggery - 1/4 cup
Desiccated coconut - 2 tbsp
Water - 1/4 cup
Vanilla extract- 1/4 tsp
Cream of Tartar - 1/4 tsp
Toasted candied coconut slices- for garnish

How to Proceed with it?
In a sauce pan, melt the powdered Jaggery with little amount of water in a medium heat.
Add the desiccated coconut and boil for 2 to 3 mins till the Jaggery is melted completely.
Wait to get sticky consistency but prolong it to string consistency.
Once you get sticky consistency, take it off from the stove and bring it to room temperature.
Place the bowl in which you are going to whip the cream in refrigerator.
Pour the cold heavy cream in chilled bowl & using a hand mixer, whip the heavy cream until you get stiff peaks.

Once you attain stiff peaks, add the Jaggery syrup, vanilla extract, cream of tartar.
Mix gently using spatula.
Transfer into the serving bowl & refrigerate for 5-6 hours.
Top it with Jaggery syrup, candied toasted coconut & nuts while serving. 😍
