
Peach Casserole

Seasonal fruits are always special and the delicious treats made with those makes it even more special. One such fruit during summer is Peach🍑. The unique flavored sweet fruit is great for many baked dishes.

Peach Casserole is similar in ingredients with the cobbler recipe except for the batter to be little thick and to be spread over the peach mix instead of going first into the baking pan for Peach Cobbler.

My version of Peach casserole is mild in sweetness which is perfect for breakfast or brunch and doesn’t give you overpowering sugar to your palate. If you want it more sugary then you can increase the measurement of sugar to another quarter cup.
This is more convenient and easy while you have guest at home or on a lazy day, let the oven cook and you can directly serve in the pan as soon as you get it out of the oven. 😉

Ingredients
Filling:
Peaches - 3 big
cut into 1/4-inch-thick slices
Brown sugar - 1/3 cup
Ground cinnamon - 1/2 teaspoon
Ground Nutmeg - a pinch
Corn flour - 1 tablespoon
Lemon juice - 2 teaspoons
Batter:
All-purpose flour - 3/4 cup
Unsalted butter - 1/2 stick (4 tablespoons)
Brown sugar - 1/4 cup
White sugar - 1/4 cup
Baking powder - 1 1/2 teaspoons
kosher salt - 1/4 teaspoon
Pure vanilla extract - 1 teaspoon
Milk, at room temperature - 3/4 cup

Ripened peaches tastes best for this recipe. Peeling out the skin from the peaches can be tricky. For that, put the peaches in boiling water for a minute.

Then immediately transfer to a ice bath or rinse with ice cold water. This will make it easy to take off the skin.

Peel off the three big peaches.

Cut the peaches into thin slices. Then add all the ingredients mentioned above for the filling.

Mix everything well with the peaches and keep it ready.

In another bowl, combine all the ingredients except the butter for the batter and make it into a smooth mixture by adding milk.

In a square cake pan(7.6 inch * 7.6 inch), melt the butter for a minute in a preheated oven at 350F. Then pour the batter onto the pan.

Tap the pan gently to get the batter evenly distributed then spread the peach mix over the batter.

Bake it for 30-35 minutes at 350F.
Once done, let it rest for 10 mins and then serve it warm with a scoop of vanilla ice cream.

You can store the peach Casserole in refrigerator for up to two to three days. Just warm it up in microwave before having then add a scoop of vanilla ice cream which makes it heavenly.
