
Thai Chicken Fried Rice/ Khao Pad

My laud for Thai Cuisine is never going to be over come what may !
My staple order at any Thai restaurant and go-to in my kitchen if i crave for thai food at home.
Jasmine rice is the main ingredient that makes it different from other fried rices and of course the fish/oyster sauce in turn contributes for the unique flavor.

It's a simple, quick and easy to make fried rice with fresh flavors, your choice of protein and a day old cooked jasmine rice to do the trick.
What are all the Ingredients you will need?
Chicken - 250gm
Eggs - 3
Jasmine rice - 300 gm
Spring onion - 2 stalks
Garlic - 5 cloves
Ginger - 1 inch
Red & green pepper - 1/2 each
Celery - 2 stalks
Chili flakes - 1 tsp
White pepper powder - 1/2 tsp
Brown Sugar - 1 tsp
Soy sauce - 1 tbsp
Dark soy sauce - 1 tsp
Fish sauce - 1 tbsp
Basil leaves- some
Oil - 3 tbsp
Salt - as required

Step by Step Instructions to proceed with:
Marinate the chicken pieces in 1 tsp soy sauce, 1/2 tsp white pepper powder and some sally for 10-15 minutes.You can also add a teaspoon of corn flour and soy sauce to lock in the juice and make it more juicier when cooked.

Heat a tablespoon of oil in a wok or pan.

Crack open three eggs in the wok and scramble the eggs.

Once the eggs are done, keep it aside in a bowl.

Heat another tablespoon of oil in the same wok and add finely chopped garlic & ginger to it.

Add the marinated chicken to it.

Add 1/2 tsp of crushed chili flakes to it and cook for 10 mins or until cooked.

Once the chicken is cooked, keep it aside along with the scrambled eggs.

Add another tablespoon of oil in the wok and add in chopped white part of scallions of spring onion.

Then add all the chopped veggies and stir fry it in high flame.

Cook for 3-4 minutes in high flame without losing the crunchiness.

Add the precooked jasmine rice (preferably cooked the previous day and refrigerated).

Turn off the heat and add all the seasonings and sauces as mentioned in the ingredients. Chili flakes - 1/2 tsp

Light soy sauce

Fish sauce

Dark soy sauce

Brown sugar

Mix everything and turn on the heat and stir it for 3 mins.

Finish it off with basil leaves and green part of spring onion.



Note:
Boneless chicken thigh are more juicier compared to breast pieces.
You can substitute chicken with shrimp, beef or tofu and any veggies of your choice. Adjust the spice level according to your taste bud by adding more chili flakes or paste. This fried rice can be had as such or make a feast out of it by preparing other thai dishes such as Thai Chicken Satay or any Thai curries.
