Shish Tawook is a widely popular Middle Eastern grilled chicken recipe. It’s a most common dish in the Middle Eastern countries with each region having its own variation. The name “Shish Tawook” has its origin from turkey meaning Shish-Skewers and Tawook - Chicken.

Here in this recipe, the chicken pieces are marinated in yoghurt, lemon juice and some spices and allowed to rest for longer hours which in turn tenderizes the meat and yield a juicy chicken when cooked at perfect temperature and time.

What are all the ingredients you need ?
Boneless Chicken pieces - 1/2 kg
Yoghurt - 1/3 cup
Olive oil - 2 tbsp
Tomato paste - 1 tbsp
Crushed Garlic & ginger - 1 tbsp
Cinnamon powder - 1/4 tsp
White pepper powder - 1/2 tsp
Black pepper powder - 1/4 tsp
Cumin powder- 1/2 tsp
Sumac powder- 1/2 tsp
Ground Paprika - 1 tsp
Chili flakes - 1/2 tsp
oregano - 1/2 tsp
Tomato ketchup - 2 tsp
Lemon juice - 1 tbsp
Salt - 1 tsp or as required

Step by Step Instructions to proceed with:
Add all the ingredients together in a mixing bowl.


Prepare the marinade by mixing all the ingredients together in a mixing bowl.

Check the salt, other flavors by tasting before you add the chicken pieces into it.

Add in the boneless chicken pieces to the marinade.

Mix the chicken pieces with the marinade and leave it overnight preferably in refrigerator or let it rest for at least an hour before cooking.

Soak the skewers in water for an hour before grilling.Then thread the chicken pieces onto the the skewers and arrange it over the grill rod.

Cook on BBQ grill or in oven or on a grill pan over the stove.
For oven grilling, preheat the oven and cook for 12 mins at 450F by turning the side after 6 minutes.
Finally keep each side on broil mode for 2 mins for the charred exterior and flavors.

Serving Suggestion: Have it along with pita bread, garlic sauce(Toum) and some salad.
Or Make it as a wrap with the pita bread 🫓, spread some garlic sauce, salad & enjoy it.

It’s a simple dish with minimal prep and cooking time except for the marination period. It’s a perfect while you are hosting a BBQ party at home or even for a perfect weekend dinner at the yard or at home.
