
Coconut Mint chutney

We, South Indians are very particular when comes to pairing the dishes with the perfect accompaniments. Most of our south indian breakfasts are not complete without Chutneys.
Chutneys are dips accompanied for typical south indian breakfast range such as idly, dosa, upma, or any fried snacks such as vada, bonda, pakoda and the list goes on.

Chutneys are available in multiple varieties such as coconut, tomato, coriander, mint, peanut and so on. Each of which can be customized in 'n' number of ways leaving you with delicious choices to pick from.
This chutney is a flavored coconut chutney with garlic, onion & mint leaves added to it unless the plain coconut chutney. You will surely prefer this chutney as it's a perfect balance of flavors.

Ingredients:
Coconut - 1 cup
Roasted Bengal gram Dhal - 4 tbsp
Green chili - 2
Garlic - 2 cloves
Pearl onion - 1
Mint leaves - few
Sugar - 1/2 tsp
Salt - as required
For tempering :
Gingelly oil - 1 tbsp
Mustard seeds & split urad dhal - 1 tsp
Curry leaves - few
Step by Step Instructions to proceed with :
In a mixer jar/blender, add all the ingredients as pictured below with salt, sugar and 1/4 cup of water.

Blend all the ingredients to a fine paste and transfer it to a bowl. Add some more water to adjust to your required consistency. Adjust the salt if required.

Next step is tempering the chutney which in turn enhances the flavor. To a tadka pan, heat gingelly oil. To the hot oil, add mustard seeds & split urad dhal. Wait till the mustard seeds splutter, then add fresh curry leaves.

Transfer the tempering to the chutney and mix it. Now the chutney is ready to be served .

Go ahead and give this chutney a go and enjoy your breakfast or snack with it. The measurements are perfect for two to three people. You can very well multiply the measurements according to your need.
